Ingredients for 1 cake (approx. 15 portions):
1 lemon
3 apples
50 g hazelnuts, whole
2 eggs
30 ml whole milk
120 g cream cheese
60 ml sunflower oil
½ tsp cardamom, ground
½ tsp, cinnamon, ground
140 g whole grain wheat flour
1 ½ tsp baking powder
80 g brown sugar, unrefined
1 pinch of salt
Preparation:
Preheat the oven to 180 ° C.
Halve or coarsely chop hazelnuts.
Thoroughly wash the lemon and zest.
Wash, halve, and core apples.
Beat eggs with sugar until foamy.
Stir in oil, cream cheese, milk, lemon zest, cardamom, and cinnamon.
Gently stir in flour, salt, baking powder, and baking soda. Don’t stir too long not to lose the foaminess.
Line a springform pan (26-28cm).
Pour batter into a pan and spread evenly.
Press apples into the dough with the cut side facing up. Sprinkle with hazelnuts and bake for 40-45 minutes.
