Apple Pie Yogurt Parfaits

This simple breakfast recipe (literally) spices up the average yogurt parfait. It is easily customizable as apples could be replaced with pears or other seasonal fruit, and different yogurts/granolas/nuts can be used if desired!

Season: Autumn

Preparation time: 10 min


Ingredients (for 1 serving):

  • 1 apple

  • 1 container of dairy-free yogurt

  • 135g granola

  • 5 pecans

  • 1 tbsp coconut oil

  • 1 tsp sugar

  • A sprinkle of cinnamon

  • 1 tsp maple syrup


Procedure:

For the apple pie filling...

  1. Cut up the two apples into bite size cubes.

  2. In a medium saucepan, caramelize the apples in coconut oil, sugar, and cinnamon (4-5 minutes).

For the parfait ...

  1. Layer the yogurt, maple syrup drizzle, apple pie filling, and granola in a bowl or jar.

  2. Garnish with pecans and/or any of your favorite nuts/seeds!

699 kcal | 22 g protein | 106 g carbs of which 16 g sugar | 23 g fat | 18 g fibre
