Here's a simple, fresh and light fig and beetroot salad. Not only is it delicious and easy to make, but also visually beautiful with flavours that complement each other perfectly.

Prep time: about 15 minutes
Ingredients
Salad:
500 g salad (mixed salad and mâche salad)
200 g goat cheese (+/- depending on how much one likes it)
300 g beetroot
4 figs
30 g walnuts
60 g sugar
1 tablespoon of unsalted butter
Honey-Lemon Dressing:
1 tablespoon of honey
2 tablespoons of lemon
4 tablespoons of olive oil
A pinch of salt
Preparation
Wash Salad
Tear goat cheese into smaller pieces
Cut the beets into fine pieces
Cut every fig into 4-6 pieces
For candied walnuts warm up the sugar with the butter in a non-stick pan and stir for 2-5 minutes. Add the walnuts. Stir until walnuts are fully coated and remove walnuts from pan.
For the sauce: mix all ingredients thoroughly
Combine everything in a salad bowl and enjoy
