Do you have overripe bananas? No need to throw them away! With this simple banana pecan mug muffin, you can have a healthy, vegan breakfast or dessert in no time!

Ingredients for 1 muffin:
1 mug
1 banana
1 tablespoon coconut oil
1 tablespoon almond milk
1 tablespoon honey
3 tablespoons flour
½ teaspoon baking powder
pinch of salt
sprinkle of cinnamon
handful of pecans
Procedure:
For the batter:
In a bowl, mash up the banana (there can still be some clumps)
Add the wet ingredients: oil, almond milk, and honey.
Add the dry ingredients: flour, baking soda, salt, and cinnamon.
Once all ingredients are incorporated, add in the pecans. If desired, other nuts or seeds may be added!
Pour batter from bowl into your mug of choice
For the baking (microwave or oven can be used):

Heat mug on medium heat for about 80 seconds, until the top of the muffin is golden brown
Let cool for a few minutes and enjoy!
For the oven:
Preheat oven to 175 degrees Celsius
Place the mug on a baking rack and let back for 25-30 minutes, until the top of the muffin is golden brown
