Winter time is soup time. You can enjoy this delicious treat in the warmth of your house and look forward to spring while tasting the sweet and delicious carrot combined with the crunch of some roasted sourdough bread.

Ingredients for 4 portions:
400g of peeled carrots
50g of margarine
2g of backing soda
2g of salt
450ml of carrot juice
25ml of water
salt to taste
Procedure:
Start with peeling the carrots cutting them into thin 5cm long stripes
Melt 30g of margarine in a pot. Then add the carrots.
Dissolve the salt and the backing soda in the water and add it to the carrots.
Cook the carrots for 40 minutes. Use a food processor to turn the carrots into a thin paste.
Now press the carrot paste through a thin sieve and bring the carrot juice to a rolling boil.
Add the juice to the paste and bring it to a boil again. Now you can add some more water until you rech your desired consistency.
Then remove from the heat and add the remaining margarine. Let it dissolve and add salt according to your taste.
