Ingredients:
4 medium potatoes, peeled and cut into 2 cm cubes
2 tablespoons olive oil
1 small onion, chopped
2 garlic cloves, minced
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1 can (400g) chopped tomatoes
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Instructions:
Preheat the oven to 200°C.
Put the cubed potatoes in a large bowl and toss with 1 tablespoon of olive oil until coated. Spread them out on a baking tray and roast for 25-30 minutes, or until crispy and golden brown.
While the potatoes are roasting, heat the remaining tablespoon of olive oil in a frying pan over medium heat. Add the onion and garlic and sauté for 5 minutes, or until softened.
Add the smoked paprika and cayenne pepper to the frying pan and stir to combine.
Pour in the chopped tomatoes and season with salt and pepper. Simmer for 10 minutes, or until the sauce has thickened slightly.
Serve the roasted potatoes on a platter and drizzle the sauce over the top.
Garnish with chopped fresh parsley (optional).
