Dried fruit and nut bread

This bread is very easy to make and can be stored for a long time. It is a perfect side to a salad or toast. Moreover, the fruits and nuts can be perfectly adapted to your personal taste and the seasons.

Ingredients for 1 bread:

  • 375 g whole wheat flour (T55 also works perfectly).

  • 300 g warm water

  • 12 g fresh baker's yeast (or 1 packet of dried baker's yeast)

  • 1 g salt

  • 10 g dried apricots

  • 10 g dates

  • 5 g pumpkin seeds

  • 5 g cashew nuts

  • 10 g hazelnuts

  • 5 g almonds

Procedure:

  1. Dissolve the yeast in the warm water in a large bowl. Leave to stand for 5 minutes. Add the flour and the salt, then mix quickly until all the flour is incorporated.

  2. After that, cover the bowl with a clean tea towel, place in an oven preheated to 40° celsius (or in a warm place in the kitchen) and let the dough rise for 1 hour.

  3. After the hour, the dough should have at least doubled in size. Line a cake pan with baking paper, pour in the dough and let it rise for another 5 minutes.

  4. Bake in a preheated oven at 220° for 35 minutes.
