Ingredients for 4 portions:
A loaf of wholemeal bread (8 slices)
4 carrots
2 red pepperonis
200 gram of mushrooms
200 gram of tomatoes
1 onion
1 clove of garlic
2 tbsp olive oil
Salt
Pepper
Procedure:
Start with laying a paper sheet on your oven tray. Heat the oven to 180 degrees.
Slice the bread and lay it on the oven tray and bake for 10 minutes.
Continue with cutting the carrots, onions, mushrooms, and tomatoes into small cubes and crush the garlic. Feel free to improvise with seasonal vegetables.
Heat the pan by adding 2 tbsp of olive oil.
First, add the garlic and onions into the pan and cook for 3 minutes.
Then, add the carrots and cook on medium heat for 5 minutes. In the meantime, don’t forget to check your sliced bread in the oven.
When the carrots are halfway cooked, add all the other vegetables and cook until it is a smooth mix.
Let you Funchetta topping for cool.
When it is cool enough, add it on top of bread slices you toasted
Serve it by putting some balsamic and a leaf of basil on top.
