Gazpacho Pesto

Vamos a la Playa meets La Dolce Vita! Italy and Spain have a long shared history (Psst, Sicily even used to be part of Spain). But most importantly we love their unique and vibrant food culture. Mediterranean, fresh and colourful.

Season: Spring/Summer

Overall cooking time: 15 min


Ingredients for 2 portions:

  • 250 g Spaghetti

  • 1 medium sized tomato

  • ½ green pepper

  • 1 small onion

  • 1 small clove of garlic

  • 1 small chilli

  • 2 tbsp. olive oil

  • 40 g parmesan

  • Basil

  • Salt, pepper and oregano to season

Procedure:

  1. Start with cooking the pasta according to the instructions on the package.

  2. Put all of the other ingredients apart from the parmesan into a blender.

  3. Blend until you have a smooth paste.

  4. Add the parmesan to the paste.

  5. Mix the paste with the pasta while adding some of the pasta water.

  6. Decorate with some basil and more parmesan.

  7. Enjoy!
