Oat Muffins

Ingredients for 8 muffins

...for the base:

  • 400 ml oat

  • 2 ripe bananas

  • ½ tbsp. cacao

  • 2 tbsp. olive oil

  • 1 tbsp. honey

...for the cream:

  • 300 ml oat milk

  • 2 tbsp. flour

  • 5 g vanillin

  • 1 tbsp. olive oil

  • 2 tbsp. honey

... for decoration:

Seasonal fruits


Preparation

Base:

  1. Preheat the oven to 180°.

  2. Mash 2 ripe bananas in a big bowl.

  3. Add the honey and oil into the bowl and mix.

  4. After that put the oat and cacao into the same bowl and mix until it is homogenous.

  5. Oil muffin pans and spoon the batter into the muffin pans.

  6. Push down the batter in each muffin pan with a small glass from the middle to create some space for the cream when it is baked.

  7. Bake for 15-18 minutes.

Cream:

  1. Put the milk and flour in a pan and heat it slowly.

  2. Mix it constantly for 15 minutes until it is thickened.

  3. Add the vanilla and honey at the end and mix for one last time.

Decoration:

Take the muffins out of their pan when it is cold. Fill them with the cream you left to cool

and decorate each with a fruit of your wish. Enjoy!
