Can’t decide whether you want to have some drinks today or not? First, try out this recipe before the decision! Whoever eats this pasta will feel tipsy afterwards, promised ;) But it is not because of the vodka in it, instead it is the amazing taste that will blow your mind away!
Preparation time: 10 minutes
Overall cooking time: 25 minutes
Ingredients for 4 people:
500 g pasta
2 tbsp. olive oil
1 onion, minced
2 cloves garlic, minced
100 ml tomato paste
1 fresh tomato, diced
3 tbsp. vodka
200 ml vegan cream
Basil for serving
½ tsp. crushed red pepper flakes
Put boiled water and pasta in a large pot and cook pasta until al dente. Don’t forget to reserve some of pasta water for the sauce, in the next step.
While the pasta is cooking start preparing the sauce. Add olive oil, minced onion, and minced garlic into a large skillet over medium heat. Stir frequently until softened.
Add the tomato you have already diced and cook for 2 minutes, stirring frequently.
Add tomato paste and red pepper flakes and cook until paste has coated, and garlic is beginning to darken.
Add vodka to pot and scrap up any browned bits from the bottom of the top. That’s how you boost the taste!
Add the vegan cream and pasta water. The amount of pasta water depends on the consistency you wish. Stir until the sauce has reached the wished consistency.
Add salt and pepper to the sauce. Your pasta is ready to serve. Serve topped with basil leaves.
