These pancakes are the perfect autumn breakfast food easy to prepare the evening before and the perfect delicious start in the day. Feel free to add any other fruits and make them even better.

Ingredients:
200g of fresh pumpkin
250ml of plant based milk
120ml of water
180g of flour
1 tsp of backing powder
a dash of ground nutmeg
1 tsp vanilla
1 tsp cinnamon powder
a pinch of salt
oil for frying
Procedure:
Start with backing the pumpkin in the oven at 180 degrees Celsius for 40 minutes. Then Blend it into a paste while continuously adding water until you reach a smooth consistency.
Then combine all the wet ingredients and slowly start adding the dry ones.
In a preheated pan add some oil and some of the pancake batter.
Fry for a few minutes on each side and enjoy with some sirup or any other topping of your choosing.
