Ingredients for 12 Cupcakes:
110 g softened margarine
110 g Sugar
2 large Eggs
110 g flour
For the buttercream:
150 g softened margarine
300 g icing sugar
3 tbsp plant-based milk
Food coloring paste of your choice
Preheat the oven at 180° and fill a cupcake tray with molds.
Then, whisk 110g softened margarine and 110g golden caster sugar together until pale and fluffy then add in 2 large eggs and continue whisking.
Add ½ tsp vanilla extract, 110g self-raising flour, and a pinch of salt, whisk until homogenous but try to avoid over-mixed batter to assure fluffy cupcakes. Then fill the cupcake tray with the mixture.
Bake for 15 mins until golden brown and leave to cool.
To make the buttercream, whisk 150g softened margarine until super soft then add 300g icing sugar, 1 tsp vanilla extract, and a pinch of salt.
Whisk until smooth and add 3 tbsp. milk.
Divide your buttercream into several bowls to color it according to your wish. (Optional)
If you want to use some fondants, roll the fondant with icing sugar to prevent anything from sticking together and cut it into scary shapes.
When the cupcakes are completely cooled pipe the buttercream on top of them and decorate it with the fondant you shaped earlier. Don’t forget to add some red food coloring drops to create some extra scare effects.
