Ingredients for 1 Crepe:
1 egg
3 tbsp. flour
3 tbsp. oat milk
Handful of spinach
Salt
Ingredients for the wrap:
Vegan nuggets
1 tbsp. hummus
2 tbsp. of vegan fondue mix from @new_roots
Pepper and carrot slices
Pomegranate
Mint leaves
Preparation
Put all the ingredients in a food or smoothie mixer.
Blend it for 2 minutes or until it is a liquid consistency.
Heat a large pan and add olive oil.
When the oil is warm enough, pour your mixture into the pan.
Cook each side for 3 minutes. Your protein-rich easy-to-cook crepe is ready in less than 15 minutes to enjoy!
To do the wrap you can use any leftover veggies from your fridge. A combination of vegan nuggets with vegan cheese and hummus tastes amazing.
You can add the pepper and carrot rest to add some color and various vitamins.
To finish you can add some pomegranate to balance the acidity and put some mint leaves on top of it.
