Syrniki - Ukrainian cheese pancakes

Tired of traditional American pancakes? Want to impress everyone at brunch? Here's a much healthier pancake recipe straight from the East.

Overall cooking time: 10 minutes


Ingredients for 12 pancakes:

  • 250g of cottage cheese or quark cheese

  • 1 egg

  • 4 tablespoons of flour

  • 1 tablespoon of sugar

  • 1 teaspoon of vanilla extract


Preparation:

  1. Mix all ingredients together until you obtain a smooth batter.

  2. Pour or scoop the batter into a hot nonstick pan, and cook until golden brown on medium heat ( approximatively 1 min per side).

  3. To serve the traditional way with sour cream/ greek yogurt and jam or with your favorite toppings.
