Easy Breezy Summer Salad

Healthy meals are quickly ready and easy to prepare. This Easy Breezy Summer Salad proves the case. Enjoy the fusion of fresh flavours and lots of protein in less than 15 min!

Season: Spring/Summer

Cooking Time: 15 min

Ingredients (for 2 people):

  • 120 g Couscous (alternatively use bulgur)

  • 1 Cucumber

  • 240 g Chickpeas

  • 130 g black beans

  • 100 g of edamame beans

  • 2 large or some cherry tomatoes

  • Olive oil or flaxseed oil (=> Get your omega 3s!)

  • Balsamic

  • Oregano

  • Parsley

  • Salt and pepper

  • Large bowl, a cooking pot


  1. Heat water and boil your couscous according to its packaging; usually, this takes 3-5 minutes.

  2. Chop your cucumber into small dice. Do the same with the tomatoes; add them to your bowl or dish.

  3. Rinse your chickpeas and beans, then add them to your bowl.

  4. Once cooked, add your couscous and season.

  5. Last but not least, add your oil and balsamic (if you do flaxseed oil, make sure your couscous has cooled; otherwise, you will destroy valuable nutrients:))

  6. Enjoy under the sun
