These lemon date protein balls are delicious and easy to take on the go! Make a bunch and eat them throughout the week

Preparation: 15 minutes
Ingredients for 16 balls:
10 dates
1 lemon (zest and juice)
1/4 cup crushed almonds
2 tbsp chia
1 tsp turmeric
¾ cups oats
½ cup coconut shreds
Directions:
Soak dates in warm water for 5-10 minutes
Remove pits and mix together the softened dates, lemon zest and juice, almonds, chia, and turmeric (you can use a food processor, manual tool, or just your hands!)
Then, mix in the oats
Use your hands to roll the mixture into bit-size balls
Then, pour coconut shreds into a small bowl, and roll each ball around in the bowl so that they are lightly coated into coconut shreds
Enjoy room-temperature, refrigerated, or frozen!
Store the protein balls in the fridge for up to two weeks; after two weeks, they should be stored in the freezer!
