Lemon Date Protein Balls

These lemon date protein balls are delicious and easy to take on the go! Make a bunch and eat them throughout the week

Season: summer/spring

Preparation: 15 minutes


Ingredients for 16 balls:

  • 10 dates

  • 1 lemon (zest and juice)

  • 1/4 cup crushed almonds

  • 2 tbsp chia

  • 1 tsp turmeric

  • ¾ cups oats

  • ½ cup coconut shreds


Directions:

  1. Soak dates in warm water for 5-10 minutes

  2. Remove pits and mix together the softened dates, lemon zest and juice, almonds, chia, and turmeric (you can use a food processor, manual tool, or just your hands!)

  3. Then, mix in the oats

  4. Use your hands to roll the mixture into bit-size balls

  5. Then, pour coconut shreds into a small bowl, and roll each ball around in the bowl so that they are lightly coated into coconut shreds

  6. Enjoy room-temperature, refrigerated, or frozen!

  7. Store the protein balls in the fridge for up to two weeks; after two weeks, they should be stored in the freezer!
