One Pot Pasta

This super quick and easy one pot pasta is a ode to those summer days when neither sun nor time would be a scarce resource: May the sun dried tomatoes, in combination with the creamy sauce and best spices let you enjoy, even these foggy days!

Cooking time: 25 min


Ingredients for 2 portions:

  • 250 g Linguine (or any pasta of your choice)

  • 75 g sundried tomatoes

  • 500 ml vegetable stock

  • 100 ml plant-based cream

  • 1 clove of garlic

  • 1 tbsp margarine (for cooking)

  • 1 tsp oregano

  • 1 tsp thyme

  • ¼ tsp cayenne pepper

  • Salt

  • Pepper

Procedure:

  1. Start with mincing the garlic and cutting the sundried tomatoes into thin strips.

  2. Add the margarine into a big pot and sauté the garlic and tomatoes.

  3. Now you can add oregano, thyme and the cayenne pepper.

  4. After quickly stirring the spices in, continue with putting the pasta and the stock in the pot.

  5. When the pasta is fully cooked add the cream as well as salt and pepper to your taste

  6. Enjoy!
