Ingredients (for 4 people):
100 ml vegetable oil
110ml of vegan milk (we used soy milk)
70 grams of vegan yogurt (we used coconut yogurt)
250 grams of flour
2 tsp of baking powder
1 package of vanilla sugar
180 grams of sugar
the zest and the juice of one lemon
For the glaze:
150 grams of caster sugar
approximately 40 ml of lemon juice
Procedure:
Start with Preheating the oven to 180 degrees Celsius. Oil the cake pan and line it with baking parchment to allow easy removal.
Then mix the flour, baking powder, sugar, vanilla sugar and lemon zest in a bowl and the oil, the lemon juice, the milk and the yogurt in another bowl and mix well.
Now combine the wet and dry ingredients, stir until you get a smooth mass and add it to your prepared cake pan. Bake the cake for approximately 40 minutes or until a knife comes out clean after poking into it.
After removing the cake from the oven let it rest for 15 minutes, combine the caster sugar and the lemon juice and put the glaze on top. Enjoy!!
