Overall cooking time: 30 min
Ingredients for 30 cookies:
240 g mix of cereal flakes (oats, spelt flakes, barley flakes, wheat flakes, millet flakes)
60 g ground hazelnuts
60 g dried cranberries
100 g honey
100 g butter
1.20 tsp baking powder
1 pinch of salt
1 pinch of cinnamon
Preheat the oven to 180 degrees (convection oven: 160 degrees).
Put some baking paper or a reusable baking mat on the baking tray.
Mix the hazelnuts with the baking powder in a bowl. Add butter, salt, cinnamon and the egg and beat it for approx. 1 minute until it becomes fluffy.
Stir in the oats, honey and the cranberries (preferably sliced into smaller pieces)
Place walnut-sized dough portions on the baking paper and flatten them a bit. Make sure that there is some space left between the cookies, since the cookies will rise.
Bake the cookies in the preheated oven for about 12 min.
Let the cookies cool down and ENJOY!
