Asparagus pesto is the perfect condiment to use this vegetable in an alternative way: a creamy sauce that can be flavoured to taste with basil leaves, potatoes, parsley, chilli pepper and used to season pasta dishes or to enjoy on slices of warm bread, for an aperitif or as a appetiser.

Ingredients (4 People):
250g Asparagus
1 onion
30g Almonds
50g seasoned pecorino
50g Parmesan
Olive oil
Salt
Procedure:
Wash the asparagus thoroughly and remove the woody part of the stalk. Cut them into rounds (including the tips). Fry the onion in oil in a frying pan and add the asparagus. Cook for about 10 minutes, until soft.
Transfer the asparagus to a blender and add the almonds, cheese, salt, pepper and a drizzle of oil and blend until pureed, or possibly leave it a little coarser, depending on taste. If you want a stronger taste, add a clove of garlic before blending. Enjoy immediately on a pasta dish or keep it in a jar for a day.
