Pulled Pancake or “Kaiserschmarrn” as we would say in Austria is a typical ski lodge dish. But let’s be honest: We could eat it every day at any time. Our homemade apple sauce or compote are ideal partners for this fluffy and delicious pancake recipe.

Ingredients for 1 portion:
120 ml milk (e.g. our homemade soy milk)
60 g flour
1 tbsp sugar or xylit
1 tbsp vegetable oil
1 tsp baking powder
1 tbsp vegetable oil for frying
1 pinch of vanilla powder
Raisins as you wish
Powdered sugar as you wish
Milk: You can use any kind of milk. We recommend our homemade soy milk or coconut drink.
Flour: For this recipe, we used white wheat flour. Spelt flour is suitable too. When using wholegrain flower, you might need to add more liquid.
Vegetable oil: We recommend tasteless sunflower seed oil or coconut oil for both the dough and for frying.
Sift flour and mix with sugar and baking powder. Sifting is optional but makes the dough smoother.
Add milk and oil. If you wish, now it is the time to mix vanilla and raisins into the dough! Mix well by hand until homogenous.If you have the time, let it rest for 10 minutes.
Heat oil in a pan and add the dough. Put a cover on the pan and let the dough smoothly fry at medium heat until the upper side is not liquid any more. This will take around 3-5 minutes. Better use less heat so the bottowm of the pancake will not turn black.
Flip the dough with the help of a spatula. Chop it into chunks (see photo. Let them fry for a few more minutes if you like a darker golden brown crust. If needed, you can add additional oil now.
Put the slightly brown pulled pancake pieces onto a plate. Decorate with sugar and serve with fresh compte and/or applesauce. Enjoy soon.
